My name is Paul, I'm a 27-year-old who made the hop from Chicago to Austin with my fiancé and corgi (photos on the left). During college, I used to be a chef in a scratch kitchen, and from there I gained a passion for food. I began to cook in my apartment as much as I could for anyone that wanted try what I could make. It was nothing crazy, but it was just the start for me.
Fast forward to the quarantine in Chicago, I discovered the wonders of smoked foods. Working from home I could tend to the meat and veggies I'd smoke and begin to learn how much more there is out there. My ultimate dream with PBQ is to take my love of smoke and combine it with the 'non-traditional'.
